Tender cubes of paneer are marinated in Gymkhana's Classic Tandoori Marinade, then chargrilled alongside sweet peppers and onions, offering a delightful blend of textures and spices.

Ingredients

  • 1 jar Gymkhana Classic Tandoori Marinade

  • 500g paneer, cut into chunks

  • 1 large green pepper, cut into large chunks

  • 1 large red onion, quartered

  • Salt to taste

Method

  1. In a bowl, combine the paneer, green pepper, and onion. Pour over the Classic Tandoori Marinade and mix well to ensure even coating. Cover and let it marinate in the refrigerator for at least 30 minutes.

  2. Preheat your oven or BBQ to 220°C (200°C fan)

  3. Thread the marinated paneer, pepper, and onion onto bamboo or metal skewers.

  4. Place the skewers on the grill or a wire rack in the oveer with a tray underneath to catch any drips.

  5. Bake or grill for 12–15 minutes, or until the paneer is golden and slightly charred. If grilling, rotate every couple of minutes.

Tandoori Onion Tomato Salad

  • 8 ripe tomatoes

  • 3 tablespoons Gymkhana Tandoori Onion Chutney

  • Juice of ½ lemon

Method

  1. Slice the tomatoes into wedges or rounds, depending on your preference.

  2. In a mixing bowl, combine the sliced tomatoes with the Tandoori Onion Chutney and lemon juice. Toss gently to ensure the tomatoes are evenly coated.

  • 10 large king prawns (preferably head-on, shell-on)

  • 4 tbsp melted butter

  • Salt to taste

Method

  1. In a bowl, coat the prawns generously with the Roasted Garlic & Chilli Marinade. Cover and let them marinate for at least 30 minutes to absorb the flavours.

  2. Preheat your grill or BBQ to its highest setting.

  3. Arrange the marinated prawns on a wire rack with an oven tray underneath to catch any drips.

  4. Grill the prawns for 8 to 10 minutes, turning occasionally, until they are well charred and cooked through.

  5. Brush the grilled prawns with melted butter and season with salt to taste.
